Gluten-Free carasau tacos

Ingredients, to serve 2

2 sheets of Sunalle Gluten-free Pane Carasau
100 g chicken
Half a pepper
Salt
Oil
Black pepper

For the sauce

Half a pepper
1 onion
1 potato
Olive oil, as required
Water, as required
Salt
Black pepper

Process

To make the sauce: cut the half pepper, the onion and the potato into small cubes and place in a heavy pan with the water and a drizzle of oil. Heat over a low flame. Once the vegetables are cooked, blend the mixture in a food processor.

Soak two sheets of gluten-free pane carasau and lay them out for a few minutes to soften. Roll some baking parchment into a ball and fold the pane carasau in half with the ball in the middle. Arrange the folded carasau in an oven dish and bake in a fan-assisted oven at 180° for around 10 minutes. They should be golden brown in colour and haven take on the classic taco shape.

While the bread is baking, dice the chicken and the remaining half pepper and fry in a pan with salt and pepper to taste. When the chicken and pepper are cooked, take them off the heat to cool a little.

Fill the carasau tacos with the warm chicken and pepper mixture and serve with the sauce.
